As we all know the Irish are well known for their use of potatoes. Now I am a big potato lover and I do love nice creamy mash in fact I would normally take mash over most other potato dishes, although not so much these days and of course my boys love my mash, especially with plenty of butter used.
For several years now I have also been mixing other things into my mash especially as a way to get my boys to eat other veg, but what is champ you may well be asking yourselves? Simple champ is basically mashed potatoes with spring or green onions mixed in. There is another popular Irish potato dish called colcannon which again is mashed potato with kale or cabbage mixed in, which is as equally nice and makes a great side dish for any meat.
Ingredients:
- 1.5kg potatoes, peeled and diced
- 290ml milk
- 85g butter
- Salt and pepper to season
- 1 bunch spring onions, finely chopped
Preparation method:
Boil the potatoes in salted water until soft then drain add the milk to the pot and heat now you can put the potatoes back in the pot and mash or what I do is put them through a ricer back into the pot then add the finely chopped spring onions and the butter, season with salt and pepper and stir well.
Spoon into a serving dish and enjoy!
