Spaghetti Bake

If your Mum was a good a cook as mine then you will surely remember some of those homely comfort foods you ate growing up! They are firmly remembered by me and in fact when I left home I got my fave 3 recipes from my Mum and this was of course one of them. I love it to this day as a great comfort food and I hope that my kids will too. Not only is it so tatsy and easy to make but it’s also a very economical meal as you don’t need many ingredients.

I always used to make this with sliced onions, but my family are very picky about eating onions so I usually puree them in a food processor first to hide them, they like the flavour but not the consistency? However I will give the original recipe from my Mum or at least how I cook it now.

Serves 4 hungry people

Ingredients:

  • 400g spaghetti
  • 1 large onion, sliced
  • 2 cloves garlic, crushed
  • 2 tbsp olive oil
  • 1 large tin peeled tomatoes
  • 400g cheddar cheese, grated
  • 1 tsp oregano
  • 1 tsp thyme
  • Salt and pepper to season

Preparation method:

Heat the oil in the pan and add the sliced onion and crushed garlic and fry for about 10 minutes until onion is soft and golden. Spoon some of the onion into a casserole to cover the bottom. Then spoon in some of the tomato and mash a bit with a fork. Season with salt, pepper, oregano and thyme, then sprinkle in some grated cheese and cover with a layer of dried spaghetti. Repeat with a layer of onion, then tomato and cheese then spaghetti. If enough tomatoe and onion left over spoon over the top of the spagehetti then sprinkle the remainder of the cheese and bake in the oven 180° until bubbling nicely and the cheese bakes on top.
